SUMMER SCHOOL : ISPICA x FERRANDI Paris

On July 7 & 8, we had the pleasure of welcoming the very first class of the Art of Food Flavouring "à la française" Summer School at FERRANDI Paris, in partnership with ISIPCA – the renowned school for fragrance, cosmetics, and flavours founded by Jacques Guerlain.
A unique training program combining the culinary excellence of FERRANDI Paris with ISIPCA’s scientific and sensory approach.
On the agenda: aroma exploration, temperature mastery, and innovation around both sweet and savoury creations – soufflés, ice creams, madeleines, and reinvented meringues…
Objective: to understand how temperature impacts aromatic perception in cooking, and to develop a refined sensitivity between culinary technique and flavour science.
