Master the art of French cooking : informations about the program
All teaching in this program will be in English (guest chefs may speak in French with simultaneous translation). Course materials will be in English. Although knowledge of the French language is not a requirement to be admitted to the program, it is important for the internship and more generally for daily life in Paris.
The program is designed to provide a comprehensive understanding of French culinary techniques, from classic methods to modern innovations. Students will engage in hands-on cooking sessions, where they will learn to prepare a variety of traditional dishes, as well as explore contemporary culinary trends. Each class is led by experienced chefs who share their expertise and passion for cooking, ensuring that students receive personalized guidance and feedback.
In addition to practical cooking skills, the curriculum includes lessons on food history, nutrition, and the art of plating. Students will also have the opportunity to visit local markets, where they can select fresh ingredients and learn about sourcing quality produce. This immersive experience not only enhances their culinary skills but also deepens their appreciation for the rich culture surrounding French cuisine.

Introductory course to French wine: production regions, terroirs, regional characteristics, wine tasting and pairing - Professional French
Beginner to advanced beginner levels: basic grammar, vocabulary related to gastronomy (equipment, techniques, action verbs …) - Gastronomy-related conferences and visits
Artisans, culinary demonstrations, guest chefs, special dinners, conferences on specific themes. Discover French culture and classic french gastronomy. - Guest Chef demonstrations
Well-known guest chefs will be invited to give demonstrations of their own recipes, share tips and techniques
The internship is a unique experience to observe and to gain a better understanding of the workings of a professional kitchen.
The optional internship lasts 3 months and is renewable under certain conditions. Students who meet the requirements to intern will be placed by their chef-instructor in prestigious restaurants or hotels in France. Internships in the student’s home country are authorized with permission.
During the internship, students will have the opportunity to work alongside experienced chefs, honing their skills in a real-world environment. They will learn about kitchen operations, food preparation, and presentation techniques, all while immersing themselves in the local culinary culture. This hands-on experience is invaluable, as it allows students to apply what they have learned in the classroom to actual kitchen scenarios.
Networking is another significant benefit of the internship. Students will meet industry professionals, build relationships, and gain insights into potential career paths. Many students find that these connections lead to job opportunities after graduation, making the internship a crucial step in their culinary journey.
Throughout the program, students will also participate in workshops and seminars that cover various aspects of the culinary arts. Topics may include food safety, menu planning, and the latest trends in gastronomy. These sessions are designed to enhance their knowledge and prepare them for the challenges of the culinary world.
As the program progresses, students will have the chance to showcase their skills in a final project. This could involve creating a unique menu, preparing a multi-course meal, or even hosting a pop-up restaurant event.
