MOF Romain Leboeuf’s Expert Demonstration for FERRANDI Paris' Intensive Program Students
MOF Romain Leboeuf recently shared his expertise in French butchery with Intensive Program students, teaching them not only technical skills but also the ethical and sustainable considerations that define the craft.
The students of the Intensive Professional Program in French Cuisine recently had the opportunity to learn from MOF Romain Leboeuf, a master of French butchery. The demonstration provided a unique chance for the aspiring chefs to gain insight into the art of butchery and sustainable practices vital to the profession.
For Romain Leboeuf, butchery is a family tradition. He learned the craft by watching his father and relatives work, which led him to win the title of Meilleur Apprenti de France (Best Apprentice in France) in 2006. In 2015, he earned the prestigious title of Meilleur Ouvrier de France (Best Craftsman in France), a recognition of excellence in French craftsmanship. Today, he owns an artisanal butcher shop in Paris, where he emphasizes quality, sustainability, and respect for the animal.
Romain’s approach to butchery is rooted in a responsible, sustainable philosophy. He works closely with local farmers who prioritize animal welfare, ensuring that every product in his shop is ethically sourced. His commitment extends to his teaching, he encouraged the students to consider the broader impact of food production and to seek out producers who share these values.
For the students, this was a chance to discover the butchery techniques of a true expert. They had the opportunity to ask questions and observe closely, allowing them to refine their skills and gain confidence in handling meat with the precision required in professional kitchens.
Romain’s passion for his trade and his commitment to preserving traditional methods left a lasting impact the students. By the end of the demonstration, the students not only had learned new butchery skills but also gained a deeper appreciation for the artistry, sustainability, and ethical considerations that come with the craft.
