The students of FERRANDI Paris' Intensive Professional Program in French Pastry  (February 2025 session) kicked off their training with an exceptional experience: a Master Class led by Jérémy Del Val, Pastry Chef at Dalloyau and the 2014 French Champion of dessert.


Known for his refined approach to modern French pastry and his dedication to technique and flavour, Chef Del Val brought his expertise directly into the FERRANDI Paris kitchens. His session offered students a deep dive into advanced pastry methods and contemporary creations that reflect both tradition and innovation, experimenting with black sesame, hazelnut and Dulcey blonde chocolate.


Throughout the day, Chef Del Val shared his knowledge and insights on:

•    Precision techniques in glazing, layering, and finishing
•    The creative process behind designing high-end pâtisserie
