FERRANDI Paris, one of the world’s most prestigious culinary schools, was recently honoured to host Joris Vée for an exclusive masterclass with students of the Intensive Professional Program in French Pastry - FERRANDI Paris. Currently Head Pastry Chef at the Michelin-starred La Grande Cascade in Paris, Vée is known for his elegant, ingredient-driven creations and was named Vice-World Pastry Champion (Junior Category) in 2019.

With experience at leading establishments such as Fauchon, Shangri-La Paris, and Le Pré Catelan, Vée brings a modern yet classically rooted approach to pastry. His visit offered students a rare opportunity to learn directly from a chef who operates at the highest level of the profession.

During the session, Vée demonstrated several of his signature desserts, showcasing refined techniques, thoughtful flavour pairings, and precise presentation. Students also gained insight into the discipline, creativity, and rigor required in top-level pastry kitchens. The desserts included: Le Boisé, la Tarte Exotique and Framboise Pistache.
